Warm Brussels Sprouts Salad With Apple Balsamic &a...

I made this salad up on the fly when one of my clients wanted a salad added to dinner (but had no salad greens!) I shaved brussels sprouts in the food processer and added a simple vinaigrette. It turned out very tasty so I thought I'd share :-)
Ingredients:
vinaigrette
1 teaspoon dijon mustard
1/2 cup apple balsamic vinegar (or regular)
sugar, salt and pepper - to taste
1/4 cup extra virgin olive oil
1 tablespoon finely chopped shallots
1 tablespoon fresh orange zest
for salad
brussel sprouts, shaved thinly by hand, small mandoline or food processor (about 4 cups)
kosher salt & fresh ground black pepper
extra virgin olive oil, for sauteing
1 cup toasted walnut halves, slightly broken up
1 cup shaved parmesan cheese
Directions:
1. Whisk all vinaigrette together (in order) in a bowl. Set aside.
2. In a large nonstick saute pan over med-high heat, a enough olive oil to coat the pan. Add brussels sprouts and saute until the sprouts start to wilt a little and start to caramelize. Take off heat and toss in the vinaigrette and walnuts.
3. Transfer into a salad bowl and let slighty cool. Top with shaved parmesan and serve warm or room temp.
