An elegant appetizer that's good before any main course. Those I've made it for just love it. Ingredients:
1 wedge or round of brie |
8oz chopped baby bella mushrooms |
1 clove finely chopped garlic |
2 tbsp. butter |
1/2 tbsp good olive oil |
1 sprig fresh rosemary |
1 tbsp fresh thyme stripped from stem |
1/2 to1 tbsp white wine (i use chardonnay) |
springling of salt and pepper |
Directions:
1. Melt butter and olive oil together and infuse rosemary into the butter mixture. 2. Remove rosemary. 3. Over medium heat add chopped mushrooms and garlic to the pan with 1/2 the thyme and saute until the mushroom liquid is evaporated and the mushrooms are fairly dry in the pan. 4. Sprinkle with salt and pepper. 5. Leaving mushrooms inthe pan deglaze the pan with 1/2 Tbsp white wine until wine evaporates. 6. Place Brie in a heat proof dish and spoon mushroom mixture over top of the brie and sprinkle with remaining thyme. 7. Place in 300-350 degree oven about 5 minutes just to warm the brie a bit. 8. Serve with your favorite cracker (I use Carrs plain water table crackers) |
