Ingredients:
1/2 pound(s) strawberries, frozen about 1 1/2 cups |
1/2 pound(s) blueberries, frozen about 1 1/4 cups |
1/2 cup(s) sugar |
1 teaspoon(s) orange zest |
1 orange juiced, with 1 tablespoon reserved |
2 teaspoon(s) cornstarch |
Directions:
1. In a medium to large sauce pan, combine the berries, sugar and all but one tablespoon of the orange juice and stir. Heat over medium heat, stirring occasionally, until the berries are thawed and the juice collects. (About 15 minutes.) 2. Add in the orange zest. In a small bowl, combine the corn starch with the tablespoon of orange juice and mix well. Add the starch-juice mixture to the sauce pan and stir thoroughly. Increase the heat and cook until simmering and thickened, stirring frequently. 3. Allow to cool a few minutes before serving. Compote should be warm, but not scalding. |
