Warm Bacon And Silverbeet Salad |

This makes a nice light lunch, or have as a side dish. It's easy to make. Cook the silverbeet in boiling water on the hob, and make scrambled eggs in the microwave. When preparing silverbeet, cut off the white parts (stem) which becomes chewy and stringy when cooked and not nice. Ingredients:
1 bunch silver beet or a bag of spinach. (about 400g) |
4-6 slices bacon (about 100g) |
2 free-range eggs |
vinegarette |
1tsp sugar |
1tsp mustard |
couple of grinds pepper |
1tbsp olive oil (or equivalent) |
3tbsp balsamic vinegar (or equivalent) |
Directions:
1. Cook the bacon to make it crispy. (I lie mine on a plate and cover with a lid and microwave for 4 mins). 2. Meanwhile boil a cup of water in the kettle. 3. Finely chop the silver beet/ spinach and, microwave in a covered large glass bowl with 1/2 cup of boiled water for 1 min. 4. While that's cooking, chop the bacon finely. 5. Crack 2 eggs into seperate microwaveable bowl and mix to break up the yolk. Cover and microwave for 1.5 mins. 6. Drain the silverbeet and add the chopped bacon and chopped cooked egg. 7. To make the vinegarette add all the listed ingredients into a jar with a lid, and shake. Pour over the salad just before serving. Enjoy! |
