Delicious Winter Salad! Ingredients:
2 tbs olive oil |
2 aubergines, cut into small cubes |
1 red onion, finely sliced |
2 tbs capers, roughly chopped |
4 tomatoes, chopped |
4 tbs chopped parsley |
1 tbs balsamic vinegar |
salad leaves and fresh crusty bread to serve |
Directions:
1. Heat the oil in a frying pan 2. Add the aubergines and fry for 10 minutes until golden and softened 3. Add the red onion, capers, tomatoes, parsley and vinegar and stir to combine 4. Remove the pan from the heat and leave to cool for about 10 minutes 5. Serve with salad leaves and warm crusty bread |
