Warm Asian Brown Rice And Salmon Salad |

One of my faves. A delicious, healthy , balanced meal. Nice change from the usual and very very easy to throw together. Good with a cup of tea. Ingredients:
1 cup cooked brown rice |
1 cup frozen asian vegetables - i buy the bulk bag at costco |
canned salmon- also buy this in bulk at costco |
sesame seeds |
sesame oil |
shredded nori ( seaweed) - can be purchased in asian grocery * optional |
chopped scallions - green parts only- *optional |
Directions:
1. Cook vegetables in microwave according to package instructions 2. In a medium sized bowl, combine cooked rice, vegetables and flaked salmon. 3. Drizzle with sesame seeds, nori and sesame oil to taste. 4. Toss one more time to incorporate. 5. Garnish with scallions if desired. 6. *Can be served warm but is also very good cold- leftovers are good the next day for lunch. |
