Pumpkin Pie in a bread recipe? Yes Please!! If you add a simple glaze, this bread can double as a moist cake - especially when baked in a round bundt pan. My kids enjoy this bread as an after school snack. Ingredients:
2 cups pumpkin puree |
3 cups all-purpose flour |
2 cups white sugar |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
2 teaspoons ground cloves |
2 teaspoons cinnamon |
2 teaspoons nutmeg |
1 teaspoon allspice |
1 teaspoon salt |
2/3 cup vegetable oil |
3 eggs |
Directions:
1. Combine dry ingredients in a large bowl and set aside. 2. In another bowl combine pumpkin, eggs, and oil. 3. Add dry ingredients to pumpkin egg mixture slowly while mixing on a medium speed. 4. Spray a bundt pan with cooking spray and once batter is smooth, pour into bundt pan. 5. Bake at 350 for 25 minutes - or until a knife inserted comes out clean. 6. **Alteration**. 7. If you would like, this recipe makes amazing cream cheese, pumpkin muffins! Line muffin tins with baking cup papers. Spoon a small amount of batter into cup. Cut a small amount of cream cheese off a brick (or spoon from a container) and place onto the batter then spoon more batter on top until the cream cheese is covered. Bake at 350 for 18 - 25 minutes.
