WALNUT STUFFED BABY RED POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brimley Estate in Garland, Texas in 1999. Ingredients:
24 baby red potatoes |
3/4 cup sour cream |
24 walnut halves toasted |
24 fresh dill sprigs |
Directions:
1. Cook potatoes in boiling water for 12 minutes then drain and cool. 2. Slice off bottom end of each potato so it sits upright and slice off 1/3 of top. 3. Scoop out potato and fill with a dollop of sour cream then top with walnut hugs. 4. Tuck in a sprig of dill then serve immediately. |
