WALNUT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Legmen Estate in Jacksonville, Texas in 1991.
Ingredients:
3/4 cup walnuts coarsely chopped
3 tablespoons walnut oil
1-1/2 teaspoons champagne vinegar
1 shallot minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
5 cups green leaf, red leaf or other leaf lettuce or a mixture
Directions:
1. In small fry pan over low heat toast walnuts shaking pan often for 10 minutes.
2. Transfer to a plate and set aside.
3. In large bowl whisk walnut oil, vinegar, shallot, salt and pepper.
4. Tear lettuce leaves into bite size pieces and add them to bowl.
5. Using tongs toss gently to coat lettuce well with dressing.
6. Arrange salad on a platter and sprinkle with toasted walnuts.
