Ingredients:
1 tablespoon(s) sesame oil |
1 onion small |
1 1/2 cup(s) quinoa rinsed in boiling water and drained |
1 red pepper small, diced |
3 cup(s) water |
1 tablespoon(s) soy sauce |
1 teaspoon(s) fresh rosemary (or 1/2 teaspoon dried) |
1 cup(s) fresh or frozen (thawed) peas |
1/2 cup(s) walnuts chopped |
Directions:
1. Preheat oven to 350. Heat oil in a medium saucepan; add onion and quinoa. Saute over medium heat, stirring constantly for about 3 minutes. Add red pepper and saute an additional 2 minutes. Add water, soy sauce, rosemary and peas (if using fresh). 2. Bring to a boil and cover, simmer for 15 min or until water is absorbed. Meanwhile, roast walnuts in 350 oven for 5-10 min.
