This tarte features a crips thin base topped with fruity and juicy nectarines and a sprinkling of aromatic walnuts. You can also vary the fruit and experiment with different types of jam in the glaze. Note please: 1 hour chill time is not included in prep time. Ingredients:
160 g flour |
1 pinch salt |
40 g splenda sugar substitute (or use powdered sugar) |
100 g butter |
5 1/2 tablespoons applesauce (unsweetened) |
500 g nectarines, washed, stoned and sliced (1 lb) |
150 g apricot jam |
30 g walnuts, chopped |
Directions:
1. In a big bowl combine flour, salt and sugar. Rub in butter using your fingers until coarse crumbs form. 2. Add the applesauce and knead into a soft, but not sticky dough. Form a ball and wrap into cling film. Chill for 1 hour. 3. Roll out the dough on a lightly floured surface to a round of approximately 10 inches. 4. Pat into a 20 cm/8 inch spring-form pan. 5. In a second bowl combine jam and nectarine slices (for easier mixing heat jam in microwave). Pour this into the pie shell. If youd like a more sophisticated presentation arrange nectarine slices in concentric circles on the dough, slightly overlapping. 6. Sprinkle with chopped walnuts and bake in the pre-heated oven at 200°C/400°F for 30-35 minutes. 7. Serve with whipped cream or ice-cream if you like. |
