Nice little muffins with a surprise inside. Ingredients:
21/4 c walnuts(about 8oz.),toasted |
2tbs. sugar |
1/8 tsp. salt |
1 tbs. orange juice |
2c all purpose flour |
2 tsp. baking powder |
1/2tsp baking soda |
1 tsp salt |
1/2c butter,softened |
3/4c sugar |
2 eggs |
1/3c orange juice |
1/3c milk |
1tbs. cooking oil |
1 recipe frosting |
Directions:
1. Line 12 muffin cups with bake cups. In food processor,finely grind nuts with 2Tbs sugar and 1/8tsp salt. Add 1 Tbs. orange juice;process until combined.Using a level Tbs. shape some nut mixture into 12 balls;st aside remaining. 2. Combine flour,baking powder,soda,and salt;set aside. Beat butter with mixer 30 seconds;beat in 3/4c sugar. Beat in eggs,orange juice,milk and oil on low until combined. Spoon half of batter into cups;top with walnut balls then remaining batter. Bake at 350 for 20 mins. or until tops spring back when touched. Cool in pans for 5 mins.. Cool on rack. Spread frosting;top with reserved nuts 3. Frosting: Beat 1/2 cups softened butter,1/4c whipping cream, and 1/2 tsp finely shreaded orange peel until combined. Beat in 11/2c powdered sugar. Spread on muffins |
