A melting little biscuit, not too sweet. We have always enjoyed these. From Readers Digest : Quick & Thrifty Cooking Ingredients:
125 g butter, softened |
1/4 cup icing sugar, unsifted |
1 teaspoon vanilla essence |
1 cup flour, sifted |
1 pinch ground nutmeg |
1 pinch salt |
3/4 cup finely chopped walnuts |
Directions:
1. Preheat oven to 150°C / 300°F. 2. Cream butter and icing sugar until light and fluffy. 3. Stir in vanilla essence, flour, nutmeg, salt and walnuts, to create a soft dough. 4. Roll the dough into 2 cm balls. 5. Place them about 3cm apart on a lightly greased baking tray, pressing each ball with the heel of your hand, to a thickness of about 1 cm. 6. Bake, uncovered, for 20 minutes, or until the bottoms are golden brown. 7. Cool on a wire rack. |
