Easy walnut couscous. Good with fennel-rubbed pork with shallot pomegranate reduction which I will post. Ingredients:
1tsp olive oil |
1/2c chopped onion |
11/4c water |
1/2tsp salt |
1/8 tsp black pepper1c couscous |
3tbs toasted chopped walnuts |
1tbs fresh chopped parsley |
Directions:
1. Heat oil in saucepan over med-high heat. Add water,salt and black pepper;bring to boil. Stir in couscous. Remove from heat;cover,let stand 5 mins. Fluff with fork. 2. Sprinkle with walnuts and parsley. |
