Easy walnut couscous. Good with fennel-rubbed pork with shallot pomegranate reduction which I will post.
Ingredients:
1tsp olive oil
1/2c chopped onion
11/4c water
1/2tsp salt
1/8 tsp black pepper1c couscous
3tbs toasted chopped walnuts
1tbs fresh chopped parsley
Directions:
1. Heat oil in saucepan over med-high heat. Add water,salt and black pepper;bring to boil. Stir in couscous. Remove from heat;cover,let stand 5 mins. Fluff with fork.
2. Sprinkle with walnuts and parsley.
