WALNUT CHEDDAR MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Skillman Estate in McKinney Texas in 1991. Ingredients:
3/4 cup all purpose flour |
3/4 cup whole wheat flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
2 teaspoons dried thyme crumbled |
1 cup chopped walnuts |
3/4 cup grated extra sharp white cheddar |
3/4 cup buttermilk shaken well |
1/4 cup walnut oil |
2 large eggs beaten lightly |
2 tablespoons honey |
1/4 teaspoon tabasco |
Directions:
1. Preheat oven to 400 then butter twelve muffin tins. 2. In a large bowl whisk together flours, baking powder, salt and thyme. 3. Stir in walnuts and cheddar until combined well. 4. In a bowl whisk together remaining ingredients and add to flour mixture. 5. Stir just until combined then divide batter among muffin tins and bake 15 minutes. 6. Cool muffins in tins on a rack 10 minutes and turn out onto rack to cool completely. |
