I found this recipe in Dr. Atkins' New Diet Revolution. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1 cup ground walnuts |
6 teaspoons equivalents sugar substitute |
3 tablespoons rum |
2 eggs, separated and at room temperature |
3/8 cup butter |
1 tablespoon protein powder |
1/3 cup walnuts, coarsely chopped |
Directions:
1. Preheat oven to 350. 2. Cream egg yolks with sugar substitute. 3. Beat egg whites until stiff and set aside. 4. Cream together all ingredients except coarsely chopped walnuts and fold in egg whites. 5. Put dough (1 tablespoon at a time) on buttered cookie sheet, place walnuts on top, and bake for about 40 minutes or until golden. |
