Between Thanksgiving and Christmas I bake 200 loaves of bread.Douglas Jennings, Ottawa, Kansas Ingredients:
1/2 cup shortening |
1 cup sugar |
2 eggs |
1 cup mashed ripe bananas (2 to 3 medium) |
1 tablespoon 2% milk |
2 cups king arthur unbleached all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup chopped walnuts |
Directions:
1. In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and milk. Combine the flour, baking soda and salt; gradually add to creamed mixture just until moistened. Fold in nuts. 2. Pour into a greased 9-in. x 5-in. loaf pan. Bake at 325° for 65-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf. |
