Walnut and Red Pepper Salsa |

Easy salsa to serve over grilled chicken and greens, or try it in a wrap with light cream cheese, fresh spinach, avocado and slivered onions. Originally from Chatelaine magazine. Ingredients:
1/2 cup walnuts, toasted and chopped |
1 cup roasted red peppers, chopped |
1/4 cup fresh parsley, minced |
1 clove garlic, minced |
2 tsp cider vinegar |
1 tsp honey |
1/4 tsp ground cumin |
1/8 tsp cayenne |
1/8 salt |
Directions:
1. Combine all ingredients in a medium bowl and stir. 2. Make an hour or two ahead (if you have time) to let the flavours blend. |
