this is a not too sweet quick bread.. nice to have in the afternoon with your tea or coffee or with Breakfast. it's good with either butter or cream cheese... the recipe come from the Goose Berry Patch cookbook collection. Read more ... this recipe makes 2 loaves. Ingredients:
1 1/3 cups honey |
1 1/4 pounds butter ( 1 and 1/2 sticks ) melted and cooled |
2 eggs |
1/2 cup milk |
2 tbsp. lemon juice |
3 1/2 cups flour |
3/4 teasp. baking soda |
1 teasp .cloves |
1/4 teasp. salt |
1 cup walnuts, chopped |
1/2 cup golden or regular raisins |
Directions:
1. combine honey, butter, eggs, milk, and the lemon juice until well blended. 2. in separate bowl combine the flour, baking soda, cloves and salt. 3. add flour mixture to the honey mixture and beat until creamy. 4. fold in the walnuts and raisins 5. pour batter into 2 greased and floured 8 1/2 x 4 1/2-inch loaf pans 6. bake at 325' F for 1 hour or until a toothpick comes out clean. 7. cool for 15 minutes in the pans, then turn out onto racks to cool completely |
