Walnut And Pomegranate Salad |

This salad can be served on it's own for lunch or as a side with dinner Ingredients:
2 pomegranates |
2 bunches arugula, cleaned |
1/2 cup walnuts |
1/2 cup walnut oil |
2 oz.. pecorino romano cheese, shaved |
Directions:
1. Roast walnuts on baking sheet for 10 minutes 350 2. Split pomegranates in half, saving juice 3. Pass remaining fruit through a sieve (some seeds should pass through) 4. Toss pomegranate juice with the remaining ingredients 5. Garnish with pecorino and pomegranate seeds 6. I suggest wearing gloves when juicing pomegranate. It can stain hands |
