Walnut and Honey Caramels |

Recipe from Australian Gourmet Traveller Magazine. Ingredients:
1 cup honey |
1 cup pouring cream |
2 1/2 cups walnuts, roasted |
1 teaspoon orange rind, finely grated (finely grated rind of one orange) |
Directions:
1. Combine the walnuts and orange rind in a bowl. Set aside. 2. In a saucepan, combine the cream and honey. Heat over a medium heat, bring to boil, reduce heat and cook for 20 minutes or until it reaches 121°C (firm ball stage) on a sugar thermometer. 3. Pour the honey mixture over the walnuts, stir to combine. 4. Place tablespoonfuls on a lightly oiled oven tray. 5. Refrigerate until set. Store in an airtight container between layers of baking paper in refrigerator or in a cool place. |
