You will enjoy this recipe for Beef Jerkey. Our uncle Wallie is well known for making the best! Ingredients:
5 lbs lean beef (approximate) |
5 cups water |
3 tablespoons pepper |
1 tablespoon onion salt |
1 tablespoon msg |
1 tablespoon dry mustard |
1/2 cup hi mountain hickory blend jerky cure (you can also use morton's tender quick home meat cure) |
2 tablespoons paprika |
1/3 cup unbleached cane sugar (do not substitute) |
1 tablespoon garlic salt |
1/3 cup worcestershire sauce |
Directions:
1. MIx all ingredients (this is the marinade) 2. Cut lean meat in 1/4 inch slices. and marinade 6 hours or overnight. 3. Drain and blot meat to remove any remaining moisture. 4. Do not rub off the black pepper. 5. Smoke at 150-200 degrees 6-8 hours. |
