Walley's Key West Catfish |

Serve with a mango salsa over fish. Ingredients:
1 lb catfish (2, 1/2 pound fillets) |
1/2 cup orange juice |
1/3 cup key lime juice, nellie & joe's |
1/4 teaspoon ginger |
1/8 teaspoon red pepper flakes |
1/2 cup onion, chopped |
Directions:
1. Mix all ingredients together. 2. Place catfish fillets in large Ziploc bag. 3. Add marinade. 4. Marinate for at least 1 hour in the fridge. 5. Place catfish and marinade in an 8 x 11.5 baking dish. 6. Bake at 375°F for 20-30 minutes. 7. Serve fish over rice with reduced marinade over fish and rice. |
