Favorite recipe from North Carolina Sweet Potato Commission. Sounds delicious! Ingredients:
1/3 cup walnuts |
3 cups sweet potatoes, peeled and grated |
1 red apple, chopped (unpeeled, cored and coarsely chopped) |
1/2 cup celery, chopped |
1/2 cup red seedless grapes, halved |
1/3 cup blue cheese, crumbled (optional) |
3 tablespoons apple juice |
2 tablespoons vegetable oil |
1 tablespoon white wine vinegar |
1 teaspoon white wine vinegar |
1 teaspoon sugar |
1/2 teaspoon salt |
Directions:
1. Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl. 2. To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce. |
