Waldorf Salad With Turkey |

This is a wonderful salad that is a plus after Thanksgiving (use some of your turkey leftovers) or any time of the year (with deli sliced turkey). Can be a side dish but is so filling we often eat it as a main dish. Ingredients:
2 cups leftover turkey meat, chopped or thickly sliced deli turkey, in slivers |
2 stalks celery, sliced |
1/3 cup flat leaf parsely, chopped |
1 crisp apple,whatever is your favorite |
1 cup golden raisins or craisins |
1/4 cup mayonnaise |
1/2 cup plain yogurt |
2 tbsp. brown sugar |
salt to taste |
1 teas. poppy seeds |
lettuce cups to serve in for garnish |
Directions:
1. In a large salad bowl combine chopped or slivered turkey, celery, parsley, apple, raisins or craisins. In a separate bowl combine mayonnaise, yogurt, brown sugar, salt and poppy seeds. Whisk well to combine. 2. Add dressing to turkey ingredients and mix well. Chill for 1 hour. Serve in lettuce leaves on a pretty plate! |
