Ingredients:
2 quarts red apples, cored and diced |
1 cup pineapple juice |
3 quarts brown rice or 3 quarts white rice, cooked and cooled |
4 cups celery, chopped |
4 cups walnuts, chopped |
3 cups raisins |
1 1/2 cups carrots, chopped |
3 cups yoghurt |
1 teaspoon cinnamon |
1 tablespoon salt |
1/2 teaspoon coriander |
Directions:
1. In a large bowl, toss apples with pineapple juice. 2. Stir in rice, celery, walnuts, raisins and carrots. 3. In a spearate bowl, blend yoghurt, salt, cinnamon and corriander. 4. Stir the dressing in the apple mixture. 5. Cover and refrigerate. 6. Serve! |
