Great brunch or breakfast to wake up to without any fuss. Easy to throw together before bedtime.
Ingredients:
1 lb kielbasa or smoked sausage, diced
1 c onion, chopped
1 c red bell pepper, chopped
20 oz pkg refrigerator (cubed) hashbrowns (ok to use frozen, but allow to thaw and blot with paper towel)
10 large eggs
1 c milk
1 c shredded monterey jack or cheddar cheese
Directions:
1. Coat Crockpot with non-stick cooking spray
2. In skillet, heat sausage and onion and Drain. Add bell peppers
3. Put 1/3 of potatoes in crockpot
4. Top with 1/2 sausage mixture
5. Repeat layers. Finish with layer of potatoes,spread evenly across top
6. In a bowl, whisk eggs and milk together. Pour over potatoes.
7. Cover and cook on LOW 6-7 hours
8. Turn crockpot off, top with cheese; allow cheese to melt and Serve.
