Waioli Tea Room Coconut Pie |

This is a recipe my mother obtained from a tea room that she and my aunt visited when they were in Hawaii a few years ago. This is the best coconut pie you will ever sink your mouth into. Enjoy Ingredients:
2 cups milk |
1/4 cup grated coconut |
1/4 cup granulated sugar |
1/4 teaspoon salt |
4 egg yolks |
3 tablespoons cornstarch |
1/2 cup granulated sugar |
1 tablespoon butter |
1 teaspoon vanilla |
2 drops almond extract |
1 single crust pie shell |
4 egg whites |
1/4 teaspoon cream of tartar |
1/2 cup granulated sugar |
1/4 teaspoon salt |
Directions:
1. Mix first four ingredients in top of a double boiler. 2. Place over but not touching water then bring water to a boil. 3. Mix egg yolks, cornstarch and remaining sugar together and add to custard mixture in pan. 4. Bring to boil and cook until thickened stirring frequently. 5. Mix butter vanilla and almond extract together then add to thickened custard. 6. Pour into baked and cooled pie shell then top with meringue. 7. Beat egg whites until stiff. 8. Mix salt, cream of tartar and sugar together and add a little at a time to egg whites. 9. Beat mixture until stiff and stands in peaks. 10. Spread over pie being sure to touch crust all around. 11. Bake at 350 for 20 minutes. |
