1 1/2 lbs ground beef |
2/3 cup cracker crumb (saltines) |
1/3 cup onion, minced |
1 egg |
1 1/2 teaspoons salt |
1/4 teaspoon ginger |
1/4 cup milk |
2 tablespoons cornstarch |
1/2 cup brown sugar, packed |
1 (13 1/2 ounce) can pineapple tidbits, drained-reserve syrup |
1/3 cup vinegar |
1 tablespoon soy sauce |
1/3 cup green pepper, chopped |
1/2 teaspoon garlic powder |
butter or cooking spray |
Directions:
1. Mix thoroughly the beef, cracker crumbs, onion, egg, salt, ginger, & milk and garlic powder. Shape mixture by rounded tablespoonfuls into balls. 2. Melt butter in skillet (or spray cooking spray onto skillet) brown and cook meatballs, remove meatballs; keep warm. 3. Drain the fat from the skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce - mixing until smooth. 4. Pour the liquid into the skillet andcook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple and green pepper into skillet. |
