Very moist and sweet cornbread, goes great with soups (especially bean soups)! Ingredients:
3 cups buttermilk baking mix |
1 cup white sugar |
2 1/2 teaspoons baking powder |
1/4 cup yellow cornmeal |
3 eggs |
1 1/4 cups milk |
1 cup butter, melted |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan. 2. In a large mixing bowl, combine baking mix, sugar, baking powder and cornmeal. 3. In a separate bowl, combine eggs, milk and melted butter; beat until creamy. Stir in flour mixture until well combined. Pour batter into prepared pan. 4. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center of the bread comes out clean. Serve warm. |
