Waffles With Peach Berry Compote |

This comes compliments of Brandi W of Fayetteville, AR. I think it came out of a TOH insert. Putting it here for safe keeping. YUM! Ingredients:
1 cup peeled and chopped peach |
1/2 cup orange juice |
2 tablespoons brown sugar |
1/4 teaspoon ground cinnamon |
1 cup blueberries |
1/2 cup sliced strawberry |
1 1/4 cups all-purpose flour |
1/2 cup whole wheat flour |
2 tablespoons ground flax seeds |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
1 cup buttermilk |
3/4 cup orange juice |
1 tablespoon canola oil |
1 teaspoon vanilla extract |
Directions:
1. Compote: In a small saucepan, combine peaches, orange juice, brown sugar and cinnamon. Bring to a boil. 2. Add berries. Cook and stir for 8 minutes or until thickened. Set aside. 3. Waffles: In a large bowl, combine flours, flaxseed, baking powder, baking soda and cinnamon. 4. Combine the buttermilk, orange juice, oil and vanilla; Stir into dry ingredients just until moistened. 5. Cook in a preheated waffle iron until golden. 6. Serve with compote and enjoy! |
