I found this one on-line, and thought I'd share it. Ingredients:
2 large lemons |
2 cups granulated sugar |
4 eggs, well beaten |
pastry for double-crust 9-inch pie |
Directions:
1. Slice lemons as thin as paper, rind and all. 2. Combine with sugar; mix well. 3. Cover and refrigerate. 4. Let stand 2 hours, preferably overnight. 5. Stir occasionally. 6. Add beaten eggs to lemon mixture; mix well. 7. Turn into unbaked pie shell,arranging lemon slices evenly. 8. Cover with top crust. 9. Cut several slits near center. 10. Cover pie edge with foil. 11. Bake at 450 F for 15 minutes. 12. Remove foil. 13. Reduce heat to 375F and bake for about 20 minutes or until knife inserted near the edge comes out clean. 14. Cool before serving. |
