My 'creative' attempt at using some leftover ingredients plus some new ones to come up with a new taste... Use your favorite kind of beans and any and all veggies that you like in pasta salads: tomato, celery, onion, carrot, etc. Read more . Or add cooked chicken to make it a complete cool-kitchen meal. Ingredients:
6 oz dry veggie spiral (tri-color) pasta (i used wacky mac brand) |
1 can red kidney beans (or whatever you prefer) |
1/2 chopped red bell pepper (or green) |
spanish olives |
4-5 tblsps fat-free sun dried tomato vinaigrette (or substitute italian) |
salt & pepper to taste |
Directions:
1. Cook pasta according to package directions, drain, and cool under running water. 2. Add the other ingredients and mix well. 3. Refrigerate overnight for best flavor. |
