This is from an 1950s edition of the Better Homes and Gardens Cookbook. The kids will love it! Ingredients:
4-5 medium potatoes, peeled, cooked, drained, and mashed |
3/4 cup hot milk |
1/2 cup shredded sharp cheddar cheese |
1/2 cup whipping cream |
salt and pepper |
Directions:
1. Preheat oven to 350F. 2. Whip potatoes with enough hot milk to make them light and fluffy, 3. Season with salt and pepper. 4. Place in a greased 8-inch round baking dish, mounding into a volcano shape. 5. Make a crater in the center. (Press a one-cup measuring cup about halfway into the potatoes.). 6. Whip the cream and fold in the cheese. 7. Pour cream and cheese mixture into the crater. 8. Bake for about 20 minutes, or until lightly browned. |
