This is a favorite of my friends for an evening of fun TV and good conversation. It's easy and makes a great dinner for a group. Ingredients:
4 lb. beef roast |
2 t. olive oil |
salt/ pepper to taste |
1 medium onion, cut into rings |
1 can (14 oz.) chopped tomatoes |
4 cloves of garlic, minced |
3 t. worchestershire sauce |
1 t. hot sauce (tobasco, or your favorite) |
10 martini olives, quartered |
3 t. olive juice |
1 cup vodka |
3/4 cup tomato juice |
1/2 cup flour |
cooked white rice |
Directions:
1. Heat the olive oil in a skillet. 2. Season beef with salt and pepper. 3. Brown beef on all sides, about 4 minutes per side. 4. Add onion to crock pot 5. In a separate bowl, combine tomatoes, garlic, whorchestershire, olives, olive juice, pepper sauce, vodka, and tomato juice. 6. Place ringed onions in crockpot. 7. Add browned roast. 8. Pour remaining ingredients over roast, put lid on and cook for 8 hours. 9. After cooking for 8 hours, reduce to warm and remove 3 cups of liquid to a sauce pan. 10. Bring to a simmer.. 11. Mix flour into 1 more cup of liquid (with the some of the onions and tomatoes and olives) and mix well. 12. SLOWLY add flour mixture into pan with simmering pan juices. 13. Cook on low for about 10 minutes to get rid of the raw flour flavor. 14. Remove roast to a serving dish and slice. Serve with rice and gravy on top. |
