Mmmm, these are addictive! Nothing like sitting around a card table with a Bloody Mary and a nice bowful of these! Ingredients:
1 pint cherry tomatoes, or grape tomatoes |
1/3 cup vodka, stoli |
3 tablespoons white wine vinegar |
1 tablespoon sugar |
2 tablespoons fresh dill weed, chopped fine |
salt and pepper, to taste |
2 tablespoons lemon zest |
Directions:
1. Cut a small shallow X on the end of each tomato. Fill a large bowl with ice waster and set aside. Drop a pint of prepared tomatoes into a pot of boiling water, wait 3-4 seconds, scoop out quickly immediately immersing in the ice water. Pop each cherry tomato from the skin and marinate in the following mixture for 1/2 hour to 24 hours (uh...do the 24 hours!). 2. Mix vodka, vinegar and sugar in a small platic sealable bag until sugar is dissolved. Add skinned cherry tomatoes, dill, salt, pepper and lemon zest. Mix well, seal bag and refrigerate until serving 3. Serve tomatoes on a small platter with toothpicks and a tiny dish of Margarita salt to dip them in. |
