Tasty omelette for the vegetarian; can substitute your own choice of vegetables - as for anyone watching their cholesterol eggs should be eaten in moderation - 1 or 2 per week. Ingredients:
2 eggs |
2 tbsp water |
1/2 onion |
1 tomato |
25 g capsicum |
1/2 cup frozen pea |
1/4 cup frozen spinach |
1 tbsp olive oil |
Directions:
1. add water to eggs and beat 2. heat olive oil in omelette pan 3. add onion and sautee until soft 4. add capsicum and sautee for a few seconds 5. add frozen peas and defrosted spinach and cook till peas are defrosted 6. add tomato and cook for a minute 7. add beaten egg lifting sides as it begins to cook 8. when the underside is cooked through, put the omelette under a grill until the top has cooked 9. serve with a green salad |
