Healthy Harvest Breakfast Muffins by QueenAstroPirate without the toppings and larger. Ingredients:
1 cup whole wheat flour |
1 1/4 cups oatmeal |
1/4 cup brown sugar |
2 1/2 teaspoons baking powder |
1/2 teaspoon sea salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 teaspoon ginger |
2 cups bananas |
2/3 cup applesauce |
1/3 cup carrot |
1/2 cup walnuts |
1 egg |
2 tablespoons butter |
Directions:
1. Preheat oven to 375. 2. Line muffin pan with lightly greased cups. 3. Combine first 8 ingredients until well blended. 4. Combine rest of ingredients and stir well. 5. Fold in banana mixture to the first ingredients until just moist. 6. Bake for about 20 minutes. |
