Perfect for a picnic in May. From The Southern Heritage Celebrations Cookbook. Ingredients:
2 cups cooked ham, diced |
1 cup celery, diced |
1 cup sweet pickle relish |
4 hard-boiled eggs, finely chopped |
1/4 cup mayonnaise, plus |
2 tablespoons mayonnaise |
1 teaspoon prepared mustard |
12 medium tomatoes |
1 1/2 teaspoons salt |
12 lettuce leaves (optional) |
Directions:
1. Combine ham, celery, pickle relish, eggs, mayo and mustard; mix well. Chill. 2. Cut tops from tomatoes; scoop out pulp, leaving shells intact. 3. Sprinkle inside of each tomato with 1/8 teaspoons salt, invert on paper towels; drain. 4. Spoon ham salad into tomato shells. 5. Serve on lettuce leaves. |
