This is from Herbs and Spices the Cook's Reference by Jill Norman. Use to rub onto fish or steak before grilling, or over a chicken before roasting. Ingredients:
3 tablespoons sea salt |
2 teaspoons black peppercorns |
1/4 teaspoon whole cloves |
1/2 teaspoon grated nutmeg |
1/4 teaspoon dried thyme |
2 fresh garlic cloves, crushed |
1/2 small onion, chopped |
2 sprigs fresh parsley |
Directions:
1. Grind all the ingredients in a mortar or food processor until well mixed. 2. Store in the refrigerator. |
