Easy, Healthy and absolutely delicious sauce for pasta, sandwiches and just about every 'red' Italian food I can think of... Ingredients:
4 cups progresso tomatoes |
2 cloves fresh garlic |
2 tbsp extra virgin olive oil |
1/2 cup grated cheese |
1/2 tsp salt |
1 tsp black pepper |
1/4 cup fresh parsley |
Directions:
1. Chop or press the garlic. 2. Saute in olive oil until tender. 3. Add all tomatoes 4. Add 1/2 can water for each can of tomatoes 5. Add salt, pepper, parsley, and grated cheese. Use a little red pepper if you like it more spicy. 6. Bring to a boil while stirring frequently. 7. Turn heat down and simmer for one hour or more. 8. This sauce freezes really good. Make a large portion for tonight, freeze the extra in throw away plastic containers. Will reheat in the micro or put the frozen lump of sauce and a little water (just cover the bottom of the pan) in a sauce pan and bring back to life over low heat. |
