I've never made this. Looks pretty good though. When we bought the house I found this recipe in a kitchen cupboard. I just re-found it and decided to post it. Ingredients:
2 tbsp. of butter |
1/2 cup sugar |
3 tbsp. flour |
1 egg yolk |
2 tbsp. vinegar |
2 tbsp. lime juice |
zest from 1 lime |
1 egg white, whipped |
1 cup water |
dash salt |
1 ready made pie crust |
Directions:
1. Bake the pie crust for 5 minutes 2. Cream the butter and sugar. 3. Add dry flour and blend in egg yolk. 4. Add vinegar, lime juice, zest and water. 5. Cook in top of double boiler until thick. 6. Stir. 7. Fold in egg white. 8. Pour filling in crust. 9. Bake until brown. 10. I have no idea what the actual cook time is on this pie. 11. I guess you have to keep an eye on it. |
