This is an old-fashioned recipe still made by the grandchildren of our early settlers. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1 cup brown sugar, tightly packed |
2 cups water |
1 cup vinegar |
2 tablespoons butter |
1/2 cup flour |
water |
2 pie crusts (either your own recipe or storebought) |
Directions:
1. Combine sugar, water and vinegar in a saucepan; bring to the boil. 2. Add butter and stir until it melts. 3. Mix flour with a little cold water to make a smooth paste. 4. Add to boiling liquid slowly and stir until thickened. 5. Line a pie pan with pastry, pour in filling and cover with strips of pastry, lattice fashion. 6. Bake at 450F for ten minutes; reduce heat to 350F and bake for an additional 25 minutes. |
