Tried and true and very good. I got this recipe from a coworker over 10 years ago and it is a mainstay in my home, we all love it and hope you do as well. Ingredients:
2 pounds fresh green beans |
1 small white onion thinly sliced vertically |
6 small slices bacon coarsely chopped |
2 large eggs |
1/2 cup cider vinegar |
1/4 cup granulated sugar |
Directions:
1. Trim beans and cut in half lengthwise then cook in boiling salted water until tender. 2. Drain then place in warm serving dish. 3. Place onion and bacon in small skillet and sauté until bacon is crisp. 4. Whisk together eggs, vinegar and sugar in small bowl then whisk this mixture into skillet. 5. When sauce is hot pour it over beans then toss and serve immediately. |
