This delicious dish is a meal in itself, and came along before chinese chicken salads became so popular. It's a bit more unique, so try it! Ingredients:
8 boneless, chicken breast halves with skins |
1 pound chinese noodles |
peanut oil |
1/2 large napa cabbage, sliced |
1/4 small red cabbage, thinly sliced |
1 bunch cilantro, chopped |
peanut dressing |
1/4 cup whole roasted peanuts |
peanut dressing |
1/2 cup rice vinegar |
1/2 cup peanut butter |
2 tablespoons chopped ginger root |
2 tablespoons sesame oil |
2 tablespoons chopped green onions |
2 tablespoons sugar |
1/2 cup soy sauce |
2 tablespoons chopped cilantro. |
Directions:
1. Salad Directions: 2. Grill chicken breasts under broiler 4 inches from source of heat until cooked on both sides, about 35 minutes. 3. Remove skin and slice diagonally into thin strips. 4. Cook noodles according to package directions,drain, and rinse in cold water. 5. Toss with small amount of peanut oil to prevent sticking. Set aside. 6. Mix sliced cabbages and cilantro. 7. Toss noodles with just enough Peanut Dressing to coat lightly. Place on serving plates. 8. Top with cabbage mixture. 9. Place chicken over cabbage. 10. Sprinkle with peanuts. 11.
