from More-with-Less cookbook. The kids enjoy this and I find it a great way to recycle leftover odds and ends. Ingredients:
4 tablespoons oil |
1/4-1/2 lb cooked meat (i even use leftover ground meat if i have it.) or 1/4-1/2 lb raw meat, cut into thin strips. (i even use leftover ground meat if i have it.) |
3 garlic cloves, minced |
1 large onion, chopped |
1 teaspoon salt |
1 teaspoon pepper |
1 teaspoon sugar |
1 tablespoon soy sauce |
3 cups cooked rice |
1 cup leftover vegetables (peas, green beans, carrots, etc.) or 1 cup frozen vegetables (peas, green beans, carrots, etc.) |
2 eggs, beaten |
Directions:
1. Heat oil in large skillet. Add meat, garlic, onion, and seasonings. Stir fry 1 -2 minutes until meat is tender and hot. 2. Add cooked rice. Stir-fry 5 minutes. 3. Add vegetables. Stir well into mixture and fry until heated through. 4. Just before serving, add eggs. Stir carefully until eggs are cooked. Serve hot. |
