Viennese Sponge Cake With Apples |

What I am finding that European sponges are airy, though Asian are lighter and airier. So, where does the leave America, as usual, HEAVY FOOTED and yucky too sweet. Ingredients:
1/2 cup all-purpose flour (unsifted) |
1 teaspoon baking powder |
2 eggs, separated |
1/2 cup confectioner's sugar |
2 tablespoons boiling water |
1 teaspoon pure vanilla extract |
1/8 teaspoon grated orange rind |
1/8 teaspoon ground nutmeg |
11/2 cups peeled, cored and thinly sliced tart apples |
1/4 cup orange juice |
1 teaspoon granulated sugar |
1/2 teaspoon apple pie spice |

21/2 tablespoons ice water |
21/2 tablespoons nonfat dry milk |
1 teaspoon lemon juice |
pinch ground nutmeg |
Directions:
1. Combine flour and baking powder; set aside. 2. 2. In a small mixing bowl, beat egg whites until stiff peaks form; set aside. 3. 3. In a medium-size bowl, beat egg yolks until lemon-colored. Add confectioner's sugar; beat until smooth. 4. 4. Stir in water, vanilla extract, orange rind, nutmeg and flour mixture. 5. 5. With a rubber spatula, fold egg whites into batter gently but thoroughly. 6. 6. Spoon batter into an 8-inch cake pan lined with waxed paper; bake in preheated 325°F oven until a cake tester inserted in the center comes out clean, about 20 minutes. 7. 7. Loosen cake with a spatula; cool thoroughly before removing-from pan. Remove waxed paper. 8. 8. In a medium-size saucepan, combine apples, orange juice, granulated sugar and apple pie spice; simmer until apples are tender, about 5 minutes. 9. 9. Cool. Place water in a medium-size bowl; sprinkle with dry milk. 15. 2. Beat with an electric mixer at high speed until soft peaks form, 10 to 12 minutes. 16. 3.
