These cookie bars are a recipe my mother had given me a long time ago, it is a European favorite and can be made all year long. The flavors will send you into Toe curling Aaahhs Ingredients:
1 c. lightly salted butter |
1/2 c. sugar |
1/4 tsp. salt |
2 large egg yolks |
2 1/2 c. all purpose flour |
1. 10oz jar of rasberry perserves or red currant jelly |
1 c. chocolate bits ( i use mini semi sweet morsels ) |
4 large egg whites |
2 cups finely ground walnuts |
1 c. sugar |
Directions:
1. This is for the crust : 2. In a large bowl combine room temp. butter and 1/2 c. sugar, work with wooden spoon til creamy. 3. mix in 1/4 tsp. salt and 2 large egg yolks, gradually add 2 1/2 c. flour. 4. mix until dough becomes firm, then knead with fingers to make a smooth dough. 5. Pat dough evenly in a 12X17 inch jelly roll pan. 6. Bake crust for 15 - 20 minutes til lightly browned. 7. filling : 8. remove crust from oven and spread the perserves on it and 1 c. chocolate morsels. 9. In a deep bowl with a mixer, beat 4 egg whites til stiff peaks form. 10. Using a rubber spatula, fold in the 2 c. finely ground walnuts and 1 c. sugar. 11. Gently spread mixture over the chocolate and jelly. 12. Bake for about 25 minutes until browned at 350 degrees. 13. cool for 15 minutes and then cut into small squares. 14. this will make about 50 or more small bars. 15. You want to make them small because these bars are very rich. 16. Enjoy with delight. |
