Very rich and buttery quiche-like side dish. The Vidalias make this recipe extra special. Ingredients:
1 1/2 cups ritz crackers, crushed or any buttery crackers |
6 tbsp unsalted butter (3/4 of a stick) at room temperature |
2 cups vidalia onions, thinly sliced |
3/4 cups milk (do not use lowfat) |
2 eggs |
3/4 tsp salt |
3/4 cups sharp cheddar cheese, packed, grated |
paprika |
parsley, freshly chopped |
Directions:
1. Preheat oven to 350'. Mix crackers and 4 tbsp butter in bowl until well blended. Press mixture on bottom and up sides of 8 inch pie plate. 2. Melt remaining 2 Tbsp butter in heavy medium skillet over medium heat. Add onions and saute until tender about 12 minutes. Arrange onions in cracker crust. Beat milk, eggs, and salt in medium bowl until blended. Season with pepper. Pour egg mixture over onions in crust. 3. Sprinkle cheese over filling. Sprinkle with paprika. 4. Bake pie until knife inserted in center comes out clean, about 35 5. minutes. Garnish with parsley and serve. 6. Source: Bon Appetit, 11/1992 7. Mel's notes: Very Rich! But sooo worth it!
