This is one of my family's favorite side dishes. Ingredients:
1 cup crushed town house crackers or saltines (ritz crackers seem to be too sweet, especially with the already sweet vidalias) |
1/4 cup plus 2 tbsp. melted butter, divided |
3 cups chopped vidalia onions |
2 eggs |
3/4 cup milk |
1/2 tsp. salt |
1/4 tsp. pepper |
1 cup grated sharp cheddar cheese |
1/8 tsp. paprika |
Directions:
1. Preheat oven to 350 degrees. 2. Combine crackers and 1/4 cup melted butter. 3. Press into a greased pie plate. 4. Saute onions in remaining 2 tbsp. butter. 5. Pour onto crust. 6. Combine eggs, milk, salt, and pepper; pour over onions. 7. Top with grated cheddar cheese. 8. Sprinkle with paprika. 9. Bake uncovered at 350 degrees for 30 minutes. |
