Vidalia Onion Pie

This is one of my family's favorite side dishes.
Ingredients:
1 cup crushed town house crackers or saltines (ritz crackers seem to be too sweet, especially with the already sweet vidalias)
1/4 cup plus 2 tbsp. melted butter, divided
3 cups chopped vidalia onions
2 eggs
3/4 cup milk
1/2 tsp. salt
1/4 tsp. pepper
1 cup grated sharp cheddar cheese
1/8 tsp. paprika
Directions:
1. Preheat oven to 350 degrees.
2. Combine crackers and 1/4 cup melted butter.
3. Press into a greased pie plate.
4. Saute onions in remaining 2 tbsp. butter.
5. Pour onto crust.
6. Combine eggs, milk, salt, and pepper; pour over onions.
7. Top with grated cheddar cheese.
8. Sprinkle with paprika.
9. Bake uncovered at 350 degrees for 30 minutes.
